As single parents we are often pulled in many different directions. We have many different tasks to complete between work and home that sometimes when we reach home the last thing we want to do is cook. Here are some quick and tastey recipe ideas for dinner. Tweek them to your enjoyment, share them, love them.


Corn and Beef over Rice
 
2 cans or/bags of frozen crisp yellow corn 
2lbs. of ground beef
small onion chopped
salt and pepper to taste
white rice (2 bags of success boil in bag rice)
 
Brown ground beef in pan breaking into small pieces as if making a meat sauce.
Add salt and pepper to taste. Add one small chopped onion to ground beef. Once completely cooked add drained corn to pan. Let cook for about 3-5 minutes. Boil rice in seperate pot. To plate, put corn and beef mixture over rice.
 
This is a quick and easy 10-15 meal idea that is tasteful and filling.

Sausage and Peppers over Rice
 
1-2 packs of sausage (Hilshire farms Keilbasa for ex.)
1 Green and 1 Red bell pepper
1 large onion
white rice
 
Cut sausage into 1/2 in. circles and place in pan to fry on medium to high heat.
When sausage begins to render oils add large onion that has been chopped into medium pieces. Add seasoning salt to taste. Add medium chopped red and green peppers. Stir fry for about five minutes. If needed add a little olive oil to pan so veggies dont stick.  Cook rice in seperate pot.  Plate: top rice with sausage and peppers.
 
This recipe can be altered by substituting sausage with boneless, skinless chicken breast, cut into small pieces, and seasoning with Goya sazon seasoning and garlic powder. Because of the chicken you will need to use olive oil or butter to prevent sticking.
 

 
  • It always helps to either make more than one meal on the week end to last a few days into the week.
  • Another good idea is to make enough food to have leftovers for another day. 
  • Remember to refrigerate your frozen meet to thaw the night before.
